Pineapple Paleo pudding

This is a healthy, vegan version of rice or semolina pudding. Chia seeds are packed with omega-3 oil and other nutrients, so are worth a try, especially in a sweet pudding. The end result does look a bit like miniature frogspawn, I admit, but I promise you that it is very tasty.

5 tbsp chia seeds

1 can coconut milk

1 tsp vanilla essence

1 level tbsp sugar (optional)

½ a pineapple

1 mango

3 passion fruit

  1. Mix coconut milk (warm slightly to melt solid part if needed), vanilla essence and chia seeds together. Stir in a little sugar to taste, then pour into ramekins or small bowls and leave to set for at least 3 hours (or overnight). Slice pineapple into strips (sprinkle with a little sugar if desired) and griddle (or grill) for 5 minutes until slightly caramelised.
  2. Make the mango and passionfruit sauce by mashing the mango and passion fruit together and sieving to make a smooth sauce. Place pineapple on top of the coconut chia, pour on some sauce and serve.
