Avocado and bacon crostini

Simple and delicious; avocado and bacon crostini, so you won't have to get into a sweat on Valentine's Day

Serves: 4-6

Crostini base

Cut slices of French or ciabatta bread, drizzle with a little olive oil and bake for 15-20mins until crisp


1 tbsp mayonnaise flavoured with lemon and garlic *

1 ripe avocado (a mood enhancing food)

2 rashers streaky bacon or pancetta, lightly grilled

1 tomato, finely chopped

1 small handful of pine nuts

  1. pre-heat your oven to 200˚C
  2. Flavour mayonnaise by adding a little lemon zest, juice and garlic. Mix in well, then spread a spoonful on each slice of bread, add a little chopped tomato and a few pine nuts. Next add a layer of sliced avocado. Cut the grilled bacon into thirds and place on top of the avocado. Finish with a sliver of Parmesan.
