Sweet and delicious, these passion fruit topped cheesecakes are an extra special ending to a fabulous meal...

Makes: 2 cups dressing

125g digestive biscuits

75g butter

200g cream cheese

50g caster sugar

1 leaf gelatine

1 tbsp vanilla essence

100ml cream

  1. Mix together and press into the bottom of ramekins, refrigerate to set.
  2. Beat the cream cheese and caster sugar together until smooth.
  3. Add 75ml of the cream and mix in until smooth and starting to thicken.
  4. Drain the gelatine and add to the remaining 25ml of the cream, mixing in the vanilla essence.
  5. Add the gelatine mix to the cream cheese mix and whisk until all incorporated, about 2-3 seconds.
  6. Spoon enough mixture into each of the ramekins and refrigerate to set.
  7. Once ready to serve, scoop out the flesh and seeds from the passion fruits. Sieve over a bowl to get rid of the seeds.
  8. Spoon the sieved juice over the set cheesecakes.
