Apple, Chestnut, Sage and Pepper Sausage Pinwheels

250g sausage meat

1 applegrated or chopped (can be any type you prefer)

200g chestnutsPeeled, cooked and roughly chopped

zest of 1 lemon

1 pinch freshly ground black pepper

500g puff pastry

  1. Mix the sausage meat, apple, chestnuts, lemon zest, sage and pepper together until all well incorporated.
  2. Roll out your puff pastry (or you can buy ready rolled) into a rectangle, keeping it about ½cm thick.
  3. Spread the mixture evenly all over the pastry leaving a 1cm strip at the end for sticking down.
  4. Egg wash the end of the strip and roll like a roulade.
  5. Cut 5cm thick slices and place on a baking tray lined with baking paper.
  6. Bake at 200°C for 25-30 mins until well cooked through, and a nice golden colour.
  7. Serve with sweet chilli jam or some tasty Christmas chutney.

N.B. For the party season, the rolls can be made in advance and then frozen.
