20 semi-dried apricots

2 packs Pancetta (depending on how many slices are in a pack)

200g cream cheese

handful of thyme

This is my spin on those other Heaven/Hell based bacon wrapped things (dates or prunes are Devils on horseback, oysters are Angels). I struggle to see where the horse comes in, but they are all to die for...

  1. Open the apricots (they are already split, so shouldn't need slicing open) and stuff each one with a teaspoon of cream cheese. Add a sprig of thyme, then wrap in a slice of Pancetta.
  2. Gently sauté in a shallow pan until the Pancetta is crispy.
  3. Serve warm. (They will keep in the warming oven for a little while.)
