Grilled aubergines

Grilled aubergines

When ready to grill place directly on the barbecue grill and cook each side for 5-6 minutes until nicely charred.

Serves: 4-6 Prepare: 20 minutes Cook: 10-12 minutes

  • 2 aubergines
  • 2 cloves garlic, crushed
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp dried mint
  • 1 tsp dried basil (you could you 2½ tsps mixed dried herbs instead)
  • 1 tsp sweet paprika
  • ¼ tsp red chilli flakes (optional)
  • pepper and salt
  1. Cut the aubergine into 5 or 6 slices lengthways.
  2. Mix all the other ingredients together.
  3. Brush the aubergines with the mixture, making sure you coat each side. Leave to rest until ready to cook.
  4. When ready to grill place directly on the barbecue grill and cook each side for 5-6 minutes until nicely charred.
  5. Remove from barbecue and serve warm or cold.
