Spiced Almond, Apple and Goat's Cheese Salad

Award-winning London chef, and one half of successful catering company Blackbird Catering, Annie O'Carroll creates mouth-wateringly tasty salad recipes to tantalise the taste buds. Using seasonal produce, Annie shows us how to spice up the traditional notion of a salad by blending unusual and exciting combinations of flavours.

Luscious Leaves

Serves 4

For the spiced almonds:

  • 400g almonds
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp black pepper
  • 2 tsp salt
  • 2 tbsp brown sugar
  • 2 tbsp chopped rosemary

Coat the almonds with all but the rosemary and bake for approx. 20 mins on a medium heat - stirring the rosemary through after 10 mins.

For the salad:

  • 2 red peppers, grilled and peeled
  • 1 apple, sliced into pieces
  • 200g pea shoots, or leaves of your choice
  • 400g goat's cheese, crumbled

Combine all ingredients and drizzle with some good olive oil and a squeeze of lemon juice
