Hidden vegetable (carrot) cake

It (sometimes) works to distract fussy eaters with fun ideas and eating games. Keeping flavours plain and separate can also work.

Makes: 12 small cakes

For the carrot cake
150g self-raising flour

125g caster sugar

2 eggs

1 tsp vanilla essence

2 medium carrots, finely grated (approx. 80g)

100ml vegetable oil

1 tsp cinnamon

50g sultanas (optional for fusspots)

For the icing:
50g cream cheese

25g softened butter

25g icing sugar

zest of an orange

1 tsp vanilla essence

  1. Pre-heat the oven to gas 4/180°C and line a 12 hole cupcake tin with paper cases.
  2. Ideally, whisk the eggs and sugar together before gradually combining the other ingredients, but I'll be honest and say that I just threw it all in, and all was fine, so if you're pushed for time...
  3. Spoon it out into the cases
  4. baked for around 15 mins
  5. Make the icing by combining all the ingredients and whipping together
  6. Once cooled, ice the cakes (substitute any other kind of icing for the fussy - or even none at all).
