Chicken fajita wrap

Tortilla wraps are great for packed lunches, and most children like a little spice, but instead of chicken with fajita seasoning, you could try plain chicken, ham, or tuna and salad or coleslaw, grated cheese and apple.

Makes: 4 wraps

For the chicken fajitas:
1 free range chicken breast, sliced into thin strips

2 peppers, sliced into strips

1 large onion, sliced

1 level tbsp fajita seasoning

tomato salsa and/or soured cream (optional)

  1. Cut the chicken breast into strips, fry gently in a little oil for 10 minutes before adding fajita seasoning.
  2. Continue to cook for another 10 minutes.
  3. You can add strips of pepper, mushroom and onion at this point, or serve them raw with some salad in the wrap.
  4. Place the mixture in the centre of the tortilla and add a little salsa/soured cream if desired (avoid soggy scenario).
  5. Roll up the wrap, tucking one end in as you go.
